Climate is one of the most powerful forces shaping the character of wine. Temperature, rainfall, sunlight, and growing season length all influence how grapes ripen, affecting acidity, sugar levels, flavor intensity, and structure. 

In this class, we explore how wines from cool, wetter climates differ from wines grown in warm, dry regions. Cool climates tend to produce wines with higher acidity, lighter body, and more delicate aromatics. Warmer climates, by contrast, often create wines that are fuller-bodied, richer, and more fruit-forward due to increased ripeness and sugar accumulation.

Through a guided tasting of six wines sourced from contrasting wine regions around the world, participants will learn how climate shapes grape development and ultimately determines the style of the finished wine.

Along the way we will discuss the science behind grape ripening, how growers adapt to different climates, and how climate change is reshaping the global wine map.
