Chardonnay is everywhere. But the world's most exciting white wines are often made from grapes that never appear on a grocery store shelf. In this class, students taste six whites from six countries—each one built on an indigenous variety with a completely different flavor profile, personality, and story. We begin in the high-altitude valleys of Argentina with the perfumed fireworks of Torrontés, move through the saline Atlantic coast of Galicia, the peppery vineyards of Austria, and the ancient cellars of Hungary before arriving in Greece, where volcanic soils produce some of the most mineral-driven whites in the world. The class closes with Spain's Godello—a variety so rich and textured it routinely stops white Burgundy drinkers in their tracks. Students leave with a new vocabulary, a wider palate, and the confidence to explore any wine list with curiosity rather than caution.
